Description
The fresh rhizomes of some spices have high risk of being contaminated by fungus either from field or during storage time. The Aspergillus, penicillium, Fusarium, Gliocladium, Phoma, Zygorhinchus and Sclerotium are isolated from ginger (Zingiber officinale rosc), turmeric (Curcuma domestica Vahl.) and “lengkuas” (Alpina galangal SW) by using Czapek Dox Agar medium + chloramphenicol 250 ppm. Fusarium oxysforum is phatogenic to lengkuas. Aspergillus flavus can produce aflatoxin. The research on fungus storage in rhizomes will be very important for the time ahead.
