Abstrak
Salah satu atribut mutu nasi yang penting adalah mutu sensori. Evaluasi sensori juga diperlukan sebagai prasyarat pelepasan varietas padi. Balai Besar Penelitian Padi (BB Padi) telah memiliki laboratorium uji organoleptik untuk melakukan evaluasi sensori. Laboratorium tersebut memiliki kelebihan dan kekurangan. Familiaritas panelis dan petugas laboratorium terhadap sistem uji sensori menjadi kelebihan utama. Selain itu sistem komputerisasi juga sudah dilakukan. Namun, sistem penyimpanan data masih bersifat lokal sehingga memerlukan kompilasi manual. Analisis sensori juga masih terbatas pada uji skoring dan hedonik. Analisis SWOT menunjukkan bahwa sistem yang ada telah cukup matang sehingga baik panelis maupun petugas laboratorium dapat menjalankan peran masing-masing dengan cukup baik. Namun demikian, masih tersimpan potensi besar untuk memperbaiki sistem tersebut sehingga lebih sempurna. Artikel ini berusaha untuk mengkaji potensi tersebut.
Abstract
One of the most important quality attributes of rice is sensory quality. Sensory evaluation is one of prerequisites for new rice varieties release. Indonesian Center for Rice Research (ICRR) has an established sensory evaluation laboratory. The laboratory has both advantages and disadvantages. Familiarity of panellists and laboratory staffs with existing sensory analysis system is the main strength. Computerized system is already implemented. Nevertheless, data storage system is done locally. Sensory analysis is also limited to scoring and hedonic tests. SWOT analysis was done to show that the existing system was mature enough. Both panellists and laboratory staffs were able to perform their roles well. Nevertheless, there is a hidden potency to improve the existing system. This article tried to address that potency.
