Abstract
Identification of Alternative Food Sources and Their Processing Technology in Relation to National Food Security. Sri Widowati. In the past three decades, the Indonesian people had been using rice and soybean as their staple foods. The consumption of these commodities is consistently increasing annually. Presently, the Indonesian population is 206.5 million people with an annual growth rate of 1.66%. The growth rate of rice production in the past ten years was only 50% of the population growth rate. Therefore, Indonesia has become the biggest rice and soybean importing country in the world. Monetary crisis has shaken the national food security, because dependency of the country from imported food materials. The use of local food materials as food alternatives will reduce the amount of imported foods and increase the national food security. Various local food crops, such as sorghum, sweet potato, cassava, taro, and yam, have been identified as potential sources of carbohydrates. Pigeon pea, cowpea, mungbean, and other legumes are potential sources of vegetable proteins.
