Abstract
Prospects of a-amylase Enzyme Production from Microorganisms. Nur Richana. Enzyme a-amylases is commonly used in various food, beverage, and textile industries. Indonesia is still importing these enzymes due to the lack of high yielding microorganism that produce these enzyme and poor technology in enzyme production. Therefore, Research on production of amylase enzymes by microorganisms is needed. The a-amylase enzymes from Bacillus spp. have been the subjects of many studies for several years. The investigations were done to gain a better understanding on production, regulation of synthesis, secretion, and properties of the enzymes. The extracellular a-amylases produced by Bacillus coagulans MII-10, 6. stearothermophilus TII-12, and B. licheniformis TVII-6 strains have been isolated in the Research Institute for Food Crop Biotechnology, Bogor. A scale up technique of a-amylases production to an industrial level is needed. Knowledge on production, purification, and characterization of extra cellular amylase enzymes from microorganisms are reviewed in this paper.
