Abstract
Evaluation of Consumer Preference and the use of Wbi Nagara (Ipomoea batatas)
in Swampy Area, South Kalimantan. Ubi Nagara is one of the potential food, which
is more well known to be used as snack by people in South Kalimantan. This study
was conducted as random sampling survey in Daha Utara, South Kalimantan. Primary
data gathered from 40 respondents who lives in town and village. Secondary data
gathered from several competence institutions. Consumer's preference were: white
colored tuber (80%); 1-2 kg tuber weighted (90%); salty flover tasted (80%). The usage
were: being boiled (60%); being fried (80%); other forms (20%). Since the usage of
Ubi Nagara in other forms in term of value added were limited, the effort to cultivate this
commodity in broader scale is needed supporting by policy maker and private as well.
