dc.description | Cocoa beans can be divided into two, namely precious cacoa (fine cocoa) and bulk cocoa. This study aimed to determine the physical and chemical properties of bulk cocoa beans in Lampung. This research was conducted in June 2009 at laboratorium test of BPTP Lampung and laboratorium THP of Politeknik Negeri Lampung. Materials used for this study were 4 types of bulk cocoa such as cocoa fruit with (1) red skin color and rough skin texture; (2) red skin color and smooth skin texture; (3) green skin color and rough skin texture, and (4) green skin color and smooth skin texture. Data observer to determine its physical and chemical properties of cocoa beans such as yield, number of seeds per fruit, 100 seed dry weight, general criteria and specific criteria. The collected data were analyzed by DMRT at 5% level. The results showed that the cocoa fruit with green skin color and skin texture of coarse produced yield, number of seeds per fruit, and the highest 100 seed weight compared with other types of lindak cocoa beans and specific criteria in accordance with the SNI No. 01-2323-2002, signed in quality class II AA. Cocoa fruit with red skin color and smooth skin texture produced higher protein and fat content than other types. | en-US |
dc.description | Biji kakao dibedakan menjadi jenis kakao mulia (fine cocoa) dan jenis kakao lindak (bulk cocoa). Penelitian ini bertujuan untuk mengetahui sifat fisik dan kimia biji kakao lindak di Lampung. Penelitian ini dilakukan pada bulan Juni 2009 di Laboratorium Uji BPTP Lampung dan laboratorium THP Politeknik Negeri Lampung.Digunakan 4 jenis buah kakao lindak yakni buah kakao dengan (1) warna kulit merah dan tekstur kulit kasar; (2) warna kulit merah dan tekstur kulit halus; (3) warna kulit hijau dan tekstur kulit kasar; dan (4) warna kulit hijau dan tekstur kulit halus. Pengamatan dilakukan terhadap rendemen, jumlah biji per buah, berat 100 biji kering, kriteria umum, dan kriteria khusus. Data dianalisis dengan uji DMRT pada taraf 5%. Hasil penelitian menunjukkan bahwa buah kakao dengan warna kulit hijau dan tekstur kulit kasar, menghasilkan rendemen, jumlah biji per buah, dan berat 100 biji tertinggi dibandingkan dengan jenis kakao lindak lainnya. Berdasarkan kriteria khusus, biji kakao tersebut sesuai dengan SNI No. 01-2323-2002, dan masuk dalam kelas mutu II AA. Buah kakao dengan warna kulit merah dan tekstur kulit halus menghasilkan kandungan protein dan lemak yang lebih tinggi dibandingkan dengan jenis kakao lindak lainnnya. | id-ID |
