Abstract
Abstract
Shallots (Allium ascalonicum) is a horticultural plant that is very important
and has high economic value. At the time of the harvest, there is a flood of
production which causes prices to fall. This study aims to analyze the business and
value added of shallot oil processing which can be taken into consideration and
business decisions. The research was conducted in July 2018 at the Food
Processing Laboratory in National Agricultural Training Center (NATC)
Ketindan - Malang using quantitative research methods. The results of the
research indicate that total revenue is Rp. 2,175,000, -, total costs is Rp.
1,136,758,- and income is Rp. 1,038,242,- or 48% from total revenue per week.
Shallot oil processing business is very feasible (profitable) with the R/C ratio is
1,9 (>1,3) and B/C ratio is 0,9 (> 0,3). The added value of shallot oil processing
production is Rp. 37,631,-/kg with a value added ratio of 38% of the production
value. Labor benefit is Rp. 11,667,-/kg or 31% from the total value added, while
the rewards for business owners is Rp. 25,964,-/kg or 69% from the added value of
shallot oil processing business. So processing Shallot oil is very profitable and
feasible for business.
