Intake of animal protein determined food consumption quality for a person to have a healthy, active, and productive life. This study aims to analyze consumption pattern and demand for animal protein sources in cattle production centres in NTB and NTT provinces. Estimation of demand elasticity used the AIDS model and of demand projection for animal protein sources in 2020-2025 utilized linear equations. Susenas data year 2014 from Statistics Indonesia was used in this study. The results showed that consumption of animal protein sources in the two provinces has not yet met the recommended daily nutritional adequacy. The participation level of beef consumption was very low at 6.06%. Demand elasticity for animal products in the rural areas was higher than that in urban areas, except for fresh fish. For income elasticity, the urban community had a higher elasticity in beef, chicken, milk, fresh fish and preserved fish, while for other meats and eggs, village communities were more responsive to income changes. Demand for beef in the two provinces in the period 2020-2025 is projected to increase. The consumption of beef/capita in 2020 is estimated at 0.44 kg and in 2025 is to reach 0.51 kg, therefore the total demand for beef is projected to be 4,720 kg and 5,734 kg, respectively. In order to achieve self-sufficiency in animal protein, in addition to the beef self-sufficiency program currently implemented, it is necessary to increase other livestock products such as poultry that have a protein content as good as beef with cheaper prices
